Cheese straws are a Southern staple. Made with butter, cheddar cheese, flour and a touch of cayenne pepper they are a treat at parties, weddings and especially with an afternoon cocktail or glass of wine. We used to make these only for weddings and at Christmastime, but over the years the reputation of our straws—not too spicy but with a good cheddar flavor—has grown so that we are grating cheese and baking them daily. Sweet Azalea came about as a way to bake, market and distribute the cheese straws (and other items) nationwide. I chose the name Sweet Azalea Bakery because
our area of the South is prolific with azaleas and I thought a decorative tin would be a nice keepsake. My artist-friend, Melanie Stokes, painted an azalea blossom at my request for the website. It has been beautifully printed on the lids of our square gift tins containing our delicious cheese straws. She also had a cotton boll painting which graces the lids of our Cotton Blossom Cookies (potato chip cookies).
